Healthy Oatmeal Pancakes
Sometimes I pack a bag, drive to my parents’ house, and sleep in my childhood room—trophies, yearbooks, stuffed animals, and those bright turquoise walls with hot pink accents still intact.
Last weekend I did just that for an early birthday celebration. My mom got up early on her day off to make vegan oatmeal pancakes, knowing I rarely sleep late. It was a treat to have someone else make breakfast, and those pancakes were filling and delicious.

This easy oatmeal pancake recipe can be made vegan and gluten-free. You can prepare the batter the night before or freeze leftovers for another day—though leftovers are rare because these are popular at the table!
