Three innovative, entertaining recipes for the holidays at home
Start with homemade apple cider — made on the grill! The aroma is unmistakable: warm, spiced, and utterly seasonal. This cozy drink is perfect for any holiday gathering; serve in a favorite mug or tumbler and enjoy the scent of fall with every sip.

Weber Grill recipes: Homemade pomegranate-ginger apple cider
Serves 6–8
Ingredients
- 8–10 fresh apples, quartered (mix tart and sweet or use all Gala for a sweeter cider)
- 1 fresh orange, quartered with peel on
- 2 tablespoons fresh ginger, minced
- 2 tablespoons whole cloves
- 1 pomegranate, seeded
- 16 cups water
- 1 cup brown sugar
- 6–8 cinnamon sticks
Kitchen equipment
- 6-quart pot with lid
- Slotted spoon
- Fine mesh strainer, cheesecloth straining bag, or straining pouch

Instructions for homemade apple cider
1. Place the apples and orange in a 6‑quart pot and set the pot on the Weber Summit Grill’s side burner.
2. Add the minced ginger, whole cloves, and pomegranate seeds. For easy cleanup, consider using a straining pouch so you can lift out the solids later without mincing or seeding perfectly.
3. Cover the fruit with water, leaving 1–2 inches of space at the top.
4. Heat over high until the mixture reaches a simmer.
5. Reduce heat to medium-low, cover, and simmer about 2 hours or until the apples are very soft.
6. Use a slotted spoon to remove solids, pressing them against a fine mesh strainer to release juices. If you used a strainer bag, simply lift it out.
7. Stir in the brown sugar, cover, and simmer 15–20 minutes to meld flavors.
8. Serve warm, garnished with an apple slice and a cinnamon stick if desired.

In my hometown of Virginia Beach, crabs are plentiful. Here’s one of my family’s favorite crab recipes you can roast on the grill.

Weber Grill recipes: Rosemary Grilled Crab
Serves 2–4
Ingredients
- 2 uncooked Dungeness crabs (about 2 pounds each)
- 1 lemon, thinly sliced
- 8–10 fresh rosemary sprigs
- 1/4 cup extra virgin olive oil
- 1/4 cup melted butter
- 4 garlic cloves, chopped
- 1 teaspoon dried red pepper flakes
- Salt and pepper, to taste

Instructions for grilled Dungeness crab
1. Roast two Dungeness crabs directly on the Weber Summit Grill for about 20 minutes.
2. Remove crabs and let shells cool until comfortable to handle.
3. Lightly crack shells, open the center shell, and remove the legs.
4. Arrange opened crabs and legs on a large baking platter and add most of the rosemary sprigs underneath.
5. Add thin lemon slices across the platter.
6. Drizzle 1/4 cup olive oil and 1/4 cup melted butter over the crab pieces.
7. Sprinkle chopped garlic, red pepper flakes, salt, and pepper over the crabs.
8. Toss gently to coat, arrange evenly, and place the platter on the grill. Cook over medium heat for 10–15 minutes.
9. Remove from the grill, garnish with remaining rosemary and lemon slices, and serve.
The Weber Summit Grill’s rotisserie is a game changer. Below is a flavorful rotisserie recipe that’s perfect for Thanksgiving or any special meal.

Weber Grill recipes: Apple-Ginger Rotisserie Chicken
Serves 4–6
Ingredients
- 8–10 Gala apples, quartered
- 2 tablespoons fresh ginger, minced
- 16 cups water
- 1/2 cup brown sugar
- 8–10 fresh rosemary sprigs (for cooking and garnish)
Kitchen equipment
- 3‑quart pot with lid
- Fine mesh strainer
- Slotted spoon
- Pro tip: add applewood chips to the Weber Summit Grill smokebox for a light smoky finish

Instructions for the rotisserie chicken
1. In a 3‑quart pot on the Summit Grill’s side burner, combine the apples and most of the rosemary sprigs. Reserve one apple and a few sprigs for garnish.
2. Cover with water, leaving 1–2 inches of space, and bring to a simmer over high heat.
3. Reduce heat to medium-low, cover, and simmer until apples are very soft, about 2 hours.
4. Remove the apples with a slotted spoon and strain any broken pieces through a fine mesh strainer. Cover and simmer the liquid an additional 15–20 minutes.
5. Place the whole chicken in the cooled apple mixture and refrigerate at least 4 hours or overnight, transferring the chicken and liquid to a larger pot if needed.
6. Remove the chicken from the brine, pat dry, and season with your favorite poultry seasoning.
7. Roast the chicken on the Weber Summit Grill rotisserie until the skin is glazed and slightly crisp.
8. Remove from the rotisserie, garnish with thin apple slices and rosemary sprigs, and serve.
