Classic deviled eggs are a timeless appetizer or side dish—simple to make, low in carbs, and ready in under 20 minutes. This straightforward version uses just a few pantry staples, so it’s perfect for last-minute gatherings or everyday snacking. Serve them chilled, at room temperature, or warmed—whichever you prefer.

There are countless ways to dress up deviled eggs, but the classic filling of creamy yolks, mayonnaise, and mustard is my go-to when I’m short on time. If you like to experiment, you can also try fried deviled eggs or a deviled egg pasta salad for a twist on the classic.
What are deviled eggs?
Also known as Russian eggs or dressed eggs, deviled eggs are hard-boiled eggs cut in half and filled with a seasoned yolk mixture. The basic filling combines egg yolks, mayonnaise, and mustard, but you can add other ingredients to suit your taste—sweet relish, bacon, crab, green onions, hot sauce, or avocado are all popular options.
How long do you boil the eggs for?
To make hard-boiled eggs for deviled eggs, place eggs in a saucepan and cover with cold water by about an inch. Bring the water to a rolling boil, then cook the eggs for 9–10 minutes. Immediately plunge the eggs into an ice bath when the time is up to stop cooking and make them easier to peel.
How long do deviled eggs last?
Prepared deviled eggs are best within one to two days when stored in the refrigerator. To keep textures fresh, store the yolk filling separately in an airtight container and wrap the egg white halves to prevent them from drying out or becoming rubbery. Assemble shortly before serving.

What other ingredients can I add?
- Bacon
- Chives
- Cheese
- Avocado
- Scallions
- Shrimp
- Crab
- Lobster
Tips
- Use older eggs for easier peeling—very fresh eggs can be harder to peel cleanly.
- After boiling, immediately transfer eggs to an ice bath. Cooling quickly helps separate the membrane from the shell and simplifies peeling.
