A bright, cooling drink with mango, strawberries, fresh mint and a hint of cumin and rock salt. Quick to prepare, it’s perfect chilled on a hot day and works well with slightly overripe fruit.

Ingredients 

 

  • 7-8 strawberries
  • 1 medium mango, peeled and chopped
  • 8-10 fresh mint leaves
  • 2-3 cups water (adjust to taste)
  • 2 Tablespoons raw sugar (or sweetener of choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon rock salt (kala namak), optional
  • 1/4 teaspoon cumin powder

Instructions 

  • Place strawberries, chopped mango, mint leaves, salt, sugar, rock salt (if using), cumin powder and enough water to cover the fruit in a pressure cooker or a deep pan.
  • If using a pressure cooker, cook for 1 whistle. If using a pan, simmer for 15–20 minutes until the mango is soft and cooked through.
  • Allow the mixture to cool, then blend until smooth. Taste and adjust salt, rock salt and sugar as needed—rock salt adds a pleasant tang.
  • Add more or less water to reach your preferred consistency. This cooler can also be made with raw fruit—simply blend without cooking.
  • Serve chilled, garnished with fresh mint leaves.
