Ingredients

  • 1 pound green beans, ends trimmed
  • 2 teaspoons salt for the boiling water

  • 2 cloves garlic, minced
  • 2–3 teaspoons fresh tarragon, minced (or substitute)
  • 1/4 cup sliced almonds
  • 1/3 cup panko breadcrumbs
  • 1/4 teaspoon salt, or more to taste
  • pepper to taste
  • 1/4 cup butter (1/2 stick)

Instructions

  1. Bring a large pot of water to a rolling boil and add 2 teaspoons salt.
  2. Wash and trim the green beans. Add to the boiling water and cover.
  3. For make-ahead: boil 3–4 minutes until crisp-tender, then immediately transfer to a bowl of ice water. When cooled, drain, pat dry, wrap in dry paper towels, and store in an airtight container in the refrigerator for up to 2 days.
