Calling this dish “gourmet” might sound surprising when the star ingredient comes from a can, but sardine lovers will understand. Let’s retire “canned” (and “frozen”) from the list of culinary insults — high-quality preserved foods can be excellent.

Gourmet Lemon Pepper Sardine Toasts With Ricotta

These gourmet toasts are an ideal lunch or appetizer: simple to make, packed with flavor, and nutritionally dense.

Ingredients
- 2 slices of your favorite fresh bread, lightly toasted
- 2 heaping TBSP ricotta cheese
- 2 oz canned sardines, preferably marinated in extra virgin olive oil with cracked black pepper — if not seasoned, add cracked black pepper to taste
- Juice of half a lemon
Optional extras
- Squash blossoms
- Sugar snap peas
- Microgreens
- Thinly sliced radishes
Instructions

Spread about 1 tablespoon of ricotta on each slice of toasted bread (add more if you like).

Divide the sardine fillets between the slices, laying them on top of the ricotta.

If the sardines aren’t already seasoned with cracked black pepper, sprinkle a generous amount over the toasts.

Add any seasonal garnishes you like — squash blossoms, sugar snap peas, microgreens, or thin radish slices all work well.

Finish with a squeeze of fresh lemon juice and serve immediately.
