I’ll be honest: the photos aren’t my best work. I struggled to find a presentation that showed these apricots clearly and attractively. No matter — the flavor is what counts, and these treats are delicious. Think of them as a quick, slightly healthier chocolate snack that’s easy to make and great to keep in the fridge for a nibble when you want something sweet.

I usually keep chocolate-covered almonds on hand for a “healthier” chocolate fix, but I wanted to try something different. I’d been craving chocolate-dipped raisins, but dipping each tiny raisin felt tedious, so I reached for dried apricots instead. They’re the perfect size for dipping and have a lovely balance of sweet and chewy that pairs beautifully with dark chocolate and seeds.

And that’s how chocolate-dipped apricots with chia and hemp seeds were born!

How do you make chia chocolate dipped apricots?

The method is straightforward and quick. Melt the chocolate, prepare a small dish of seeds, and dip. To add texture and nutrition, I roll the chocolate-coated apricots in a mix of hemp and chia seeds. You can use only chia or only hemp if you prefer, but the combination looks nice and adds a pleasant crunch.

  • Combine 2 tablespoons hemp seeds and 2 tablespoons chia seeds in a small dish.

  • Dip each dried apricot so about two-thirds is coated with chocolate, then immediately roll or dip the chocolate portion into the seed mixture. Place on the prepared sheet.
  • Chill in the refrigerator for at least an hour, until the chocolate firms up. Store finished apricots in an airtight container at room temperature for 2–3 weeks, or refrigerate if you prefer them chilled.

Do you have to use unsulphured apricots for this recipe?

No — either kind works. I used natural, unsulphured apricots, which are darker in color and slightly milder in flavor. The bright orange, sulphured apricots you often see in stores will also work and will give a more vivid appearance. Choose whichever you prefer or have on hand; both are tasty when paired with dark chocolate and seeds.

These are a lovely little homemade treat for snack time, packed lunches, or a simple dessert. They’re quick to make and portable, and the seeds add a boost of texture and nutrients. If you want to vary the flavor, try sprinkling a pinch of flaky sea salt on the chocolate before it sets, or use chopped nuts in place of the seeds.

Instructions

  3. Pour the hemp and chia seeds into a small shallow dish.
  4. Working one apricot at a time, dip about two-thirds of the apricot into the melted chocolate, then immediately dip or roll the chocolate-covered portion into the seed mixture. Place the coated apricot on the prepared baking sheet and repeat with the remaining apricots.
  5. Refrigerate the baking sheet for at least one hour, or until the chocolate is set. Remove and enjoy.

Storage: Store apricots at room temperature in an airtight container for 2–3 weeks, or keep them chilled in the refrigerator if you prefer them cold.
