How to make Banana Chocolate Chip Muffins

This recipe uses wholesome ingredients, including just 1/4 cup coconut flour — a little goes a long way. The banana provides most of the sweetness, helping keep added sugar low while still delivering a rich, satisfying flavor with chocolate chips.

For sweeter muffins without extra sugar: use a very ripe banana (dark, almost black) or choose stevia-sweetened chocolate chips or cacao nibs.

Coconut Flour Substitute

Coconut flour is very absorbent and cannot be substituted 1:1 with other flours. If you swap to regular flour for this recipe, use about 1 cup of that flour instead of 1/4 cup coconut flour and adjust liquids as needed to reach the right batter consistency.

Common alternatives that work well in many recipes include:

  • King Arthur Gluten-Free Measure for Measure Flour

  • King Arthur All-Purpose Flour

  • Bob’s Red Mill Finely Ground Almond Flour

  • Bob’s Red Mill Gluten-Free Flour

When converting, a helpful rule is to start with 1/4 cup coconut flour per 1 cup of regular flour and adjust the batter until it reaches the desired texture.

Coconut Flour Nutrition

Coconut flour is high in fiber and contains healthy fats and protein, making it a nutritious alternative to many conventional baking flours. A 1/4 cup serving typically provides:

  • 120 calories

  • 16 grams carbohydrates

  • 6 grams protein

  • 4 grams fat

  • 10 grams fiber

  • 3.6 milligrams iron — about 20% DV

Healthy Chocolate Chip Muffins for Toddlers

Use a mini muffin pan to make bite-size muffins perfect for little hands. These muffins include wholesome ingredients: coconut and peanut butter provide healthy fats that support growth and development.

Vegan, Keto, and Paleo Variations

To make these muffins vegan, substitute flax eggs (2 tablespoons flaxseed meal mixed with 5 tablespoons water) or a powdered egg replacer and use dairy-free chocolate chips. For keto, use low-carb chocolate chips and consider reducing banana or replacing with a low-carb sweetener while adjusting texture with a bit more fat.

For dairy-free chocolate chips, choose a reliable brand labeled vegan to retain the chocolaty flavor.

Peanut Powder Alternatives

You can use almond butter powder, natural peanut butter, or another nut/seed butter. If using a spreadable nut butter instead of powdered peanut, reduce the amount to 1/4 cup to keep the batter balanced.

Description

These chocolate chip banana muffins use coconut flour and no added refined sugar when ripe bananas provide the sweetness. They are naturally gluten-free and easily adapted for keto, vegan, or paleo diets.

Ingredients

  • 2 eggs
  • 1 ripe banana, mashed (or 1/4 cup maple syrup)
  • 1/4 cup avocado oil or melted coconut oil
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup cocoa powder
  • 1/2 cup peanut powder (or substitute)
  • 1/4 cup coconut flour
  • 1/2 cup chocolate chips (use vegan or no-added-sugar if desired)

Instructions

  1. Preheat oven to 400°F and grease a muffin tin.
  2. In a large bowl, whisk together the eggs, mashed banana, oil, and vanilla. Stir in the cocoa powder until smooth.
  3. Add baking soda, salt, and almond milk and whisk until combined.
  4. Stir in peanut powder and coconut flour, then fold in the chocolate chips.
  5. Spoon batter into muffin cups. Optionally add a small dollop of peanut butter on top and sprinkle extra chocolate chips.
  6. Bake about 15 minutes, or until muffin tops are set and a toothpick comes out crumbly but not wet.
