Today’s recipe is a little lighter but still cozy and satisfying. This Caramelized Apple Wheatberry Porridge with Cranberries and Pepitas is creamy, comforting, and ideal for chilly mornings. It’s vegan too, though I kept the title short!

If you haven’t tried wheatberry porridge before, you’re in for a treat. Wheatberries are chewy yet tender when cooked and offer a nice change from oatmeal or chia pudding. They take longer to cook, so plan ahead, but the resulting texture is fantastic alongside sweet caramelized apples, tart cranberries, and crunchy pepitas. It’s an ideal breakfast for fall.

Caramelized Apple Wheatberry Porridge with Cranberries and Pepitas #AppleWeek
Ingredients
- 1 cup wheatberries
- 4 cups water
- 1 ½ cups unsweetened soy milk
- 1 teaspoon apple pie spice
- ½ teaspoon ginger powder
- ½ teaspoon vanilla extract
- 5 packets Stevia (or substitute ¼ cup brown or granulated sugar)
- *For the caramelized apples*
- 2 apples peeled, cored, and diced
- 1 tablespoon coconut oil
- ¼ cup brown sugar
- ½ teaspoon apple pie spice
- *To serve: cranberries and pumpkin seeds
Instructions

Cook the wheatberries: place them in a medium pot with 4 cups of water and bring to a boil. Reduce to a simmer and cook about 1 hour, until the wheatberries are tender with a slight chew.

To make the porridge, combine the cooked wheatberries with soy milk, apple pie spice, ginger, vanilla, and Stevia (or sugar). Simmer on low, stirring occasionally, until the mixture thickens, about 20–30 minutes.

Make the caramelized apples while the wheatberries cook: heat coconut oil in a medium nonstick pan over medium heat. Add the diced apples, brown sugar, and apple pie spice. Cook, stirring frequently, until the apples are soft and the syrup thickens, about 15–20 minutes.

To serve, spoon the wheatberry porridge into bowls and top with caramelized apples, dried cranberries, and pepitas. Serve warm and enjoy.
