Gluten Free Chocolate Covered Cherry Cookie Bites

It’s been a while since I shared a gluten free recipe, so I was excited when Pillsbury asked me to create something using their new gluten free products. I chose to work with the Pillsbury Gluten Free Chocolate Chip Cookie Dough and turned it into Chocolate Covered Cherry Cookie Bites — an easy, crowd-pleasing treat.

Ready-made products like Pillsbury Gluten Free Cookie Dough simplify the process: the base is already prepared, so you can focus on flavor and finishing touches.

Pillsbury has three new gluten free dough products
Pillsbury introduced three refrigerated gluten free dough products to make gluten free cooking easier:
- Gluten Free Chocolate Chip Cookie Dough
- Gluten Free Thin Crust Pizza Dough
- Gluten Free Pie or Pastry Crust
These refrigerated tubs are available at grocery retailers and supercenters nationwide. I sampled the Gluten Free Chocolate Chip Cookie Dough and liked it straight from the tub — it tastes like classic cookie dough and performs well in baked recipes.
For this post I made Chocolate Covered Cherry Cookie Bites using the GF cookie dough as a base. The recipe is simple and uses just three ingredients: Pillsbury Gluten Free Chocolate Chip Cookie Dough, maraschino cherries, and chocolate chips.
Ingredients you’ll need:
- 1 container Pillsbury Gluten Free Chocolate Chip Cookie Dough
- 10 oz maraschino cherries, drained well and roughly chopped
- 1 to 1½ cups chocolate chips (I used milk chocolate)

How to make Gluten Free Chocolate Covered Cherry Cookie Bites
Chocolate Covered Cherry Cookie Bites

Gluten free baking can be a challenge, so it’s okay to rely on ready-made products. Dress them up and make them your own!
Ingredients
- 1 container Pillsbury Gluten Free Chocolate Chip Cookie Dough
- 10 oz maraschino cherries, drained well and roughly chopped
- 1 – 1½ cups chocolate chips
Instructions
- Microwave the cookie dough for about 10 seconds to soften it slightly — this makes it easier to stir and shape.
- Stir the chopped maraschino cherries into the cookie dough until evenly distributed.
- Line a mini cupcake pan with mini liners.
- Using about ½ to ¾ teaspoon of the cherry-studded dough, fill each liner about ¾ full.
- Bake in a 350°F oven for 10–12 minutes, until edges are set and tops are lightly golden.
- Remove the pan from the oven and immediately sprinkle chocolate chips to cover the top of each baked cookie.
- After about five minutes, press and smooth the melted chocolate with the back of a spoon over each cookie so it forms a glossy layer.
- Allow cookies to cool completely so the chocolate firms up.
- Store finished cookies in an airtight container.
Notes
- These cookie bites are an easy way to enjoy gluten free chocolate chip cookies with a cherry-chocolate twist.
- Use your preferred chocolate chips — dark or semi-sweet work well if you prefer less sweetness.
- Be sure to drain and chop the cherries well so the dough’s texture stays consistent.
