Gourmet Lemon-Pepper Sardine Toasts with Ricotta and Herbs

Calling this dish “gourmet” might sound surprising when the star ingredient comes from a can, but sardine lovers will understand. Let’s retire “canned” (and “frozen”) from the list of culinary insults — high-quality preserved foods can be excellent.

Gourmet Lemon Pepper Sardine Toasts With Ricotta

These gourmet toasts are an ideal lunch or appetizer: simple to make, packed with flavor, and nutritionally dense.

Ingredients

  • 2 slices of your favorite fresh bread, lightly toasted
  • 2 heaping TBSP ricotta cheese
  • 2 oz canned sardines, preferably marinated in extra virgin olive oil with cracked black pepper — if not seasoned, add cracked black pepper to taste
  • Juice of half a lemon

Optional extras

  • Squash blossoms
  • Sugar snap peas
  • Microgreens
  • Thinly sliced radishes

Instructions

  • Spread about 1 tablespoon of ricotta on each slice of toasted bread (add more if you like).
  • Divide the sardine fillets between the slices, laying them on top of the ricotta.
  • If the sardines aren’t already seasoned with cracked black pepper, sprinkle a generous amount over the toasts.
  • Add any seasonal garnishes you like — squash blossoms, sugar snap peas, microgreens, or thin radish slices all work well.
  • Finish with a squeeze of fresh lemon juice and serve immediately.
