Delicious Detox Salad
Yields about 2–3 main-course salads
Ingredients:
For the Salad:
- 1 bag prewashed kale, or a prepackaged kale mix
- 1/2 bag shredded broccoli slaw
- 10 cherry or grape tomatoes, halved
- 1/2–1 cup pomegranate seeds (fresh, frozen, or substitute with dried pomegranate, pumpkin seeds, or sunflower seeds)
- 1/2 cup walnuts, chopped (or your favorite nut)

For the Dressing:
- 1/2 cup lemon or lime juice
- 1/4 cup extra virgin olive oil
- 1 tsp fresh ginger, minced
- 1 tbsp honey or preferred sweetener
- Pinch cayenne pepper (optional)
- 1/4 tsp sea salt, or to taste
- 1/8 tsp ground black pepper

Directions:
- In a large serving bowl, add the whole bag of kale and toss to fluff. Layer the broccoli slaw, halved tomatoes, pomegranate seeds, and chopped walnuts on top. Refrigerate until ready to serve.
- While the salad chills, combine the dressing ingredients in a mason jar or a small bowl with a tight lid. Shake or whisk until well blended. Chill the dressing for at least 15 minutes to let the flavors meld.
- When ready to serve, drizzle the desired amount of dressing over the salad and toss gently to coat. Serve immediately. Extra dressing can be stored in the refrigerator for up to 5 days.
