Roasted Red Pepper Pork Chops – Savory Monday Dinner Recipe

I don’t know about you, but on a random Monday night I need a meal that won’t spend an hour in the oven. Otherwise it’s almost bedtime before we eat. That’s why I love my Pampered Chef Deep Covered Baker for Oven and Microwave. Yes—microwave.

This dish came out of the microwave and was ready to eat in just 15 minutes.

Thanks to that baker, dinner was fast and hot.

I started with four pork chops that I had set in the fridge before work.

I added seasoning to the chops—some of my spice essentials.

I sprinkled seasoned salt on both sides of the pork chops, then placed them in the baker.

Into a half jar of roasted red pepper and onion relish I added about six shakes of chipotle Tabasco and three to four shakes of liquid smoke. The relish I used came from a kitchen store, but a similar pepper-and-onion relish would work equally well.

I minced two garlic cloves and a shallot—because is there really such a thing as too much onion?

I mixed the relish, garlic, and shallot together, then poured the mixture over the pork chops in the baker.

I covered the baker and microwaved the pork chops for 15 minutes.

And voila—tender, flavorful pork chops ready to serve.

While the pork chops cooked, I tossed potato wedges into the oven and prepared Mexican-style corn with black beans. The whole meal was on the table in under 30 minutes.
