How cute is this Sausage Roll Christmas Tree! With just sausages, puff pastry, an egg wash and a sprinkling of fresh herb, it comes together quickly and makes a festive addition to any holiday table.

Here’s another super easy holiday appetizer idea. Similar to my classic Easy Sausage Rolls recipe, this one is quick to make and fun to assemble. After sharing a Christmas Tree Charcuterie Board recently, I thought a sausage roll tree would be another festive and easy option for holiday gatherings.

What to Expect
- Difficulty level – Very easy. If you can open and cut store-bought puff pastry you can make this. Assembly takes about 15 minutes.
- Taste – Savory and satisfying. Use the sausage variety you prefer to match your taste.
- Holiday themed – A playful, seasonal appetizer that works well for lunches, parties and buffets.

Ingredients
- Sausages – Thin sausages work best for this appetizer; they’re easier to wrap in pastry and bite-sized when cut.
- Puff pastry – Store-bought puff pastry is ideal and saves time.
- Egg – One whisked egg for brushing the pastry to get a golden finish.
- Fresh parsley – Finely chopped for garnish, to add a pop of green.
REMEMBER, the full recipe and instructions are provided below in the recipe card.

Instructions
- Preheat oven – Heat oven to 375°F (190°C). Line a large baking tray with parchment paper and set aside.
- Cut sausages – Slice all the sausages in half crosswise.
- Prepare sausage rolls – Cut the puff pastry into strips slightly narrower than the sausage width. Place a sausage on each strip and roll up, trimming the pastry as needed. Once all sausages are wrapped, cut each roll in half so they are bite-size.
- Cut pastry stars – Use a small star cutter to make a few pastry stars for decoration.
- Assemble tree – Place a star at the top of the tray. Arrange one roll beneath it, then a row of two, a row of three, and so on until most rolls are used. Reserve two pieces for the trunk and scatter extra stars around the tray.
- Brush with egg wash – Lightly brush each pastry-wrapped sausage with the beaten egg for color and shine.
- Bake – Bake 15–18 minutes, or until the pastry is golden and puffed.
- Serve – Sprinkle with finely chopped parsley and serve with your favorite dipping sauces.

Recipe Tips
- Use thin sausages – Thin varieties roll and bake more evenly; avoid very thick sausages for best results.
- Allow pastry to thaw – Make sure the puff pastry is fully thawed and pliable before cutting to prevent cracking.
- Work with cold pastry – Puff pastry is easier to handle when it’s cold; if it warms up it can stretch and tear.
- Watch baking time – Oven temperatures vary. The rolls are done when golden and puffed—mine finished in about 15 minutes.
- Prep ahead – Assemble the tree, cover and refrigerate up to 24 hours before baking for easy entertaining.

Substitutions
- Puff pastry alternatives – If you don’t have puff pastry, try pizza dough, pie crust, phyllo, biscuit dough or crescent roll dough as substitutes.
- Sausage options – Any thin sausage works. Vegetarian sausages or cocktail wieners can be used for a meat-free option.
- Egg wash alternatives – Melted butter gives a softer sheen; garlic butter adds extra flavor.
- Seasonings – Sprinkle Everything Bagel seasoning, sesame or poppy seeds before baking for a flavor boost.

Serving and Storage
- Buffet friendly – This pairs well with other holiday finger foods on a buffet table.
- Kid-friendly – The bite-size pieces make it a hit at kids’ parties and lunches.
- Potluck ready – Bake or assemble and wrap in foil to take to a party; it travels well.
- Serve hot or room temperature – These are delicious straight from the oven or served at room temperature.
- Pairing ideas – Offer Dijon mustard & honey, barbecue sauce, hot sauce, sweet-and-sour or any favorite dip alongside.
